maple carrot cake

Ingredients

  • 3 cups of shredded carrots
  • 2 cups of flour
  • 2 cups of brown sugar
  • 4 TBSP of 100% maple syrup
  • 1 1/2 TBSP of vanilla extract
  • 1 cup of butter
  • 4 eggs
  • 2 TSP of baking powder
  • 1 TBSP of cinnamon
  • 1 TSP of salt
  • 8 cups of confectioners sugar
  • 1 cup of butter
  • 16 oz of cream cheese
  1. Wet ingredients. Add brown sugar and softened butter into a stand mixer. Mix at medium high until light and fluffy.
  2. Add maple syrup, vanilla extract and eggs. Combine at medium until incorporated.
  3. Dry ingredients. In separate bowl, mix flour, salt, baking soda, and salt.
  4. Slowly mix into the wet ingredients until fully incorporated.
  5. Add in shredded carrots a cup at a time.
  6. Bake cake. Heat oven to 350. Add cake batter into two 8 inch round cake tins sprayed with cooking spray.
  7. Bake at 350 for 40 minutes.
  8. Cream Cheese Frosting. Add softened butter and cream cheese into a mixer.
  9. Slowly add confectioners sugar until light whippet frosting is achieved.
