
Ingredients
- 3 cups of shredded carrots
- 2 cups of flour
- 2 cups of brown sugar
- 4 TBSP of 100% maple syrup
- 1 1/2 TBSP of vanilla extract
- 1 cup of butter
- 4 eggs
- 2 TSP of baking powder
- 1 TBSP of cinnamon
- 1 TSP of salt
- 8 cups of confectioners sugar
- 1 cup of butter
- 16 oz of cream cheese
- Wet ingredients. Add brown sugar and softened butter into a stand mixer. Mix at medium high until light and fluffy.
- Add maple syrup, vanilla extract and eggs. Combine at medium until incorporated.
- Dry ingredients. In separate bowl, mix flour, salt, baking soda, and salt.
- Slowly mix into the wet ingredients until fully incorporated.
- Add in shredded carrots a cup at a time.
- Bake cake. Heat oven to 350. Add cake batter into two 8 inch round cake tins sprayed with cooking spray.
- Bake at 350 for 40 minutes.
- Cream Cheese Frosting. Add softened butter and cream cheese into a mixer.
- Slowly add confectioners sugar until light whippet frosting is achieved.
